1. The starter / Cucumber verrine with mint green tea

This fresh and tasty starter is very simple to make and will surprise the palates of food lovers!
Ingredients
• 3 mint tea bags
• 4 tablespoons of tapioca pearls
• 1 cucumber
• About fifteen fresh mint leaves
• 2 plain yogurts
• 1 tablespoon of olive oil
• A pinch of salt and pepper
• A zest of lemon
Preparation
• Bring ¾ liter of water to a boil, then infuse the tea bags.
• Add the tapioca pearls to the infusion and let it steep for 15 minutes.
• Peel the cucumber, blend it
• Add the mint leaves
• Mix the infusion, cucumber, mint, and lemon zest
• Serve in small glasses and refrigerate.
Best enjoyed very chilled!

2. The dish / Salmon with its green tea sauce

Ingredients
• 1 salmon fillet with skin
• 50cl of fish stock
• 1 1/2 tsp. of Matcha green tea powder
• 40 cl of sour cream
• 2 tablespoons of lemon juice
• 5 tablespoons of sesame seeds
• Salt, pepper
Preparation
• Pour the fish stock into a saucepan and reduce it until about a tablespoon of liquid remains.
• Remove the pan from the heat
• Add the cream and tea.
• Return to the heat and reduce by half.
• Add the lemon juice.
• Preheat the oven (350F)
• Place the salmon in a dish (skin side up and bake)
• Cook for 8 minutes, leaving the oven door ajar.
• Serve the salmon and brush it with sauce

3. Dessert / Chocolate, date and green tea fondant

Finish with a chocolatey treat you won't soon forget! This delicious chocolate fondant is quick and easy to make!
Ingredients
• 250 g of dark baking chocolate
• 200 g of butter
• 4 eggs
• 100 g of icing sugar
• 60 g of flour
• 40 g of powdered green tea
• 100 g of dates
Preparation
• Preheat the oven to 350°F (gas mark 6).
• Pit the dates and cut them into very small cubes.
• Melt the chocolate and butter
• Chop the ginger and candied cherries into small pieces.
• Add the icing sugar and then the flour to the butter and chocolate, mixing well until you obtain a smooth dough.
• Then incorporate the eggs one by one, followed by the green tea
• Butter a mold and pour in the batter.
• Cook for 25 minutes.
• Remove the fondant from the oven and let it cool.
