Preparing the matcha tea cake
To ensure the dough is nice and creamy, work it with a fork.
Mix the almond flour and sugar until well combined. Add the eggs, bitter almond extract, orange blossom water, and matcha tea, then mix everything together. Chill the mixture until firm enough to spread easily. Prepare the milk and egg yolk mixture.

In the meantime, don't forget to start your oven at 350F.
Place the first sheet of puff pastry on your baking tray. Brush the edges with the egg-milk mixture.
Next, spread the almond cream and place a bean on top, pressing it in slightly.

Make a shallow cut in the middle so the galette doesn't puff up too much. Make small cuts around the edge for decoration.
Decorate the top of your galette however you like, be original!
