Cold iced tea
Cold-brewed iced tea will undoubtedly be better than hot-brewed iced tea. In fact, this is how you should always make iced tea; it completely changes the game. Patience is the secret ingredient!
Cold brewing is a slow, gentle infusion process that creates a milder, sweeter-tasting tea. The tannins, which make tea bitter, are not "stained" in cold water as they are in hot water. This means the tea will be much smoother, not bitter.
Because cold brewing does not involve hot water, it is perfect to prepare during the warm summer months and remains the simplest way to make iced tea.
However, unlike hot infusion, this requires a minimum of 12 hours of infusion.

What you need:

Preparation steps
STEP 1: Put tea and water in a pitcher or glass container.
Use fresh or room-temperature water. There's no need to boil water to make iced tea. The most flavorful tea is made with the best water, so use filtered water.
STEP 2: Cover the pitcher and refrigerate for at least 12 hours.
Most teas should be cold-brewed for at least 12 hours, EXCEPT for green teas. Green teas like sencha only need to be cold-brewed for 3 hours.
Green tea, in general, is more delicate to prepare, both hot and cold. It can taste bitter if not prepared correctly. Black tea, oolong tea, and herbal teas are the easiest to prepare because they need to be steeped for 12 hours.
STEP 3: Filter the tea leaves.
Instead of using a strainer, the easiest way to prepare cold brew tea is to use a teapot with a filter because you can simply remove the infuser instead of filtering the tea into another container.
STEP 4: Pour the tea into a cup with or without ice.
Cold brewed tea is already chilled, so adding ice is optional.
Cold-pressed iced tea contains caffeine, unless you've used herbal tea.
All types of tea can be cold brewed, but some precautions should be taken with tea (see above).
Iced tea can be kept in the refrigerator for 4 days
It is best to buy loose leaf tea for brewing as it is generally better, but it is perfectly possible to use tea bags.
