But what is the real difference between these various types of teas and infusions?

Teas

White tea originated in China, but also in other Asian countries. The tea leaves undergo the least processing compared to other teas. Green tea, on the other hand, undergoes slightly more oxidation during its preparation. It is generally recommended for digestive problems and for eliminating toxins.
Oolong tea is very popular in Asia, and is not bitter, although its preparation is very similar to black tea: the more oxidation it undergoes, the closer it becomes to black tea. Black tea, on the other hand, undergoes complete oxidation and can therefore be stored for several years without losing flavor or freshness!
Pu'erh tea is produced from the leaves of a variety of tea plant grown in a province in southern China. This type of tea is unique because not only can it be consumed several years after its production, but the flavor, due to post-fermentation, actually improves over time.

Infusions

Yerba mate is a traditional South American infusion that has become particularly popular in Levantine countries such as Syria and Lebanon. It is prepared in a special container where the leaves are carefully added until it is full, then shaken to separate the fine particles. Hot water is then added and the infusion begins. Rooibos Although nicknamed red tea, it is actually an infusion, the leaves of which come from a shrub that grows only in South Africa. It is usually drunk with milk and sugar, and the infusion lasts about 10 minutes. Its antioxidant properties are justified for treating allergies, digestive problems, and even sleep disorders!
As for infusions, it is their preparation method that distinguishes them from other types of tea. Generally, the leaves are added to boiling water and left to steep for a few minutes. The liquid is then strained and consumed before it cools.

Iced tea or Ice Tea

Yes, even tea can be a refreshing drink! Iced tea, as the name suggests, is cold tea served with ice cubes. In some countries, milk or sugar is added, but the most common combination is with mint or fruit-flavored syrups.
