This tea, which is particularly appreciated, is nevertheless one of the least consumed, and represents only 2% of the world's tea.
Oolong tea is of Chinese origin and means "Black Dragon". It is halfway between black tea (fully oxidized) and green tea (which is not oxidized) because its oxidation is incomplete.

There are several types of OOLONG tea:
• Lightly oxidized teas
• Highly oxidized teas
• Mature Oolong coffees roasted multiple times
• Young, multi-roasted Oolong coffees

Characteristics of OOLONG tea

When Oolong tea leaves are harvested from the tea plant (Camellia sinensis), they don't yet belong to any "category," meaning that initially the tea is neither green, black, nor white. Oolong is almost identical to black tea, the difference being its fermentation process, which varies between 10 and 70%.
Thus, OOLONG teas can be light (10 to 20%), medium (20 to 50%) or strong (50 to 80%).
Finally, depending on its degree of fermentation, OOLONG tea can be of different colours.
