Matcha tea and raspberry cake

We love this recipe; the sweet flavor of the raspberries pairs perfectly with the bitterness of the Matcha tea! Plus, this recipe is butter-free :)

The ingredients

  • 100 g of sugar
  • 60g of almond flour
  • 110 g of flour
  • 3 beaten eggs
  • 200g of white chocolate
  • 100g of applesauce
  • 20 cl of liquid cream
  • 100g of raspberries
  • ½ packet of yeast
  • 3 teaspoons of Matcha tea

Preparation

Mix the almond flour and sugar. Add the eggs, then the flour.
Melt the white chocolate and pour it into the previous mixture. Then add the remaining ingredients: the yeast, applesauce, matcha tea, and heavy cream. Mix everything together until you have a smooth batter.
Pour the batter into a loaf pan, add some raspberries, and pour more batter over the top. Bake for 40 minutes at 350°F.
Feel free to add a few raspberries as decoration!

Green tea popsicle

This is the perfect treat to delight your children, especially ideal for Easter as it's very easy to hide anywhere in the house or garden!
For the cake
  • 100g of unsalted butter - 100g of flour
  • 100g of powdered sugar
  • 2 eggs
  • 1 teaspoon of matcha tea or powdered green tea
  • 1/2 packet of baking powder
For the decor
  • 100g of white, dark or milk chocolate depending on your taste.
  • 100g of cheese, there's the cream
Decorations
Wooden or plastic lollipop sticks

Preparation

In a bowl, mix the eggs and sugar. Add the matcha or green tea, flour, baking powder, and butter. Mix the batter and bake for 30 minutes.
Once baked, blend the cake with the cream cheese and then form into even balls. Place on a baking sheet and refrigerate.
Melt the chocolate, dip the cake balls in it, then add the decorations, and put them back in the fridge for an hour!

Soft and light cream with vanilla and Earl Grey tea

To finish on a sweet note, we offer you a delicious and very smooth recipe: a vanilla and Earl Grey cream!

The ingredients

  • 20 cl of liquid cream (minimum 3.25%)
  • 35 cl of milk
  • 2 vanilla pods or natural vanilla extract
  • 2 eggs + 1 egg yolk
  • 2 tablespoons of honey
  • 2 tablespoons of light brown sugar
  • 1 teaspoon of Earl Grey tea

Preparation

Preheat the oven to 350°F
Whisk the eggs with the egg yolk and honey. Gently heat the milk and sugar, then add the vanilla. Infuse for 5 minutes, then strain the mixture.
Add the cream to the mixture and stir. Pour the mixture into individual ramekins and bake for one hour at 200°F.
Let it cool and enjoy!
