Apricots, the quintessential summer fruit, are readily available in our local markets. For jam, we recommend using organic, pesticide-free apricots. It's also very important to wash them thoroughly before starting the recipe.

The preparation
Wash the apricots thoroughly, then cut them into small wedges. Place the apricots in a large bowl and sprinkle with sugar, add the vanilla pod and lemon juice, and let them sit for an hour.
During the resting time, boil the water and then add the vanilla tea. Let it steep for 5 to 10 minutes. Pour the hot tea directly over the mixture after the resting time.
Put everything in a saucepan or jam pot and bring to a boil, let it boil for 15 to 20 minutes.
