On hot summer days, we're always on the lookout for new, refreshing, and preferably healthy recipes! We have just the thing for you: iced tea granita recipes. They can be enjoyed throughout the day without alcohol, or as a refreshing cocktail on occasion, perhaps with a touch of alcohol.
Green tea, mint and lemon granita
The first recipe is very heavily inspired by the famous mojito, so there are two variations of this recipe, one without alcohol and one with.
The ingredients
50g of sugar (sugar can be replaced with a substitute such as agave syrup for example)
3 tablespoons of green tea
1 bunch of fresh mint
Juice of 1 lemon (organic if possible)
60cl of filtered water

Preparation
Mix the water and sugar and boil for 6 minutes.
Remove from heat and add the tea and 5 mint leaves
Let it steep for 5 minutes and then strain.
Pour this mixture onto a plate and place in the freezer for 3 hours. Regularly scrape off the glitter that forms over time with a fork.
Once the granita is thoroughly frozen, divide it among 4 dessert cups and garnish with the remaining mint leaves.
For the alcoholic version, add 5ml (or less) of white rum per ice cream sundae.
Serve and enjoy!

Raspberry and lemon granita
This favorite recipe can be enjoyed endlessly; refreshing and full of vitamins, it is perfect for sipping by the pool, and it is also ideal for adults and children thanks to its slightly tangy taste.
The ingredients
500g of raspberries (fresh or frozen)
300ml of water
a tablespoon of lemon tea or herbal tea (or 1 lemon-flavored tea bag)
70g of sugar (or substitute)

Preparation
Blend approximately 500g of raspberries until completely pureed. For an even smoother and perfect result, you can simply mash the raspberries with a fork.
In a saucepan, melt 70g of sugar over low heat with 300ml of water, and bring to a boil. Once the syrup is ready, pour it into a bowl and refrigerate.
Next, mix the raspberry puree with the sugar syrup, add 50 ml of lemon tea-infused water and the juice of one lemon.
Pour the mixture into a shallow container, to a maximum depth of about 2.5 cm. Cover and place flat in the freezer for at least 2 hours to freeze the mixture.
After 2 hours in the freezer, use a fork to scrape the ice crystals from the edge towards the center of the granita, which should not yet be completely frozen. Return the granita to the freezer, repeat this process after 1 hour, and then again after another hour.
Finally, after 4 hours of freezing, all that remains is to serve and enjoy the granita with a few raspberries as decoration!
